otoh, use bacon fat instead of shortening in things. cut a third of the butter out of chocolate chip cookies and replace with bacon fat. it's incredible. also try with skillet cornbread, see this recipe with a unique twist on when to add it

Inspired by this, and the fact I've never made one, I made a gruyere/mushroom/shallot/rosemary galette Unfortunately no pics of the other half of the meal, beef tenderloin that I sous vide'ed with rosemary, thyme, and duck fat, finished off in a cast iron pan.
