Definitely going to have to try grilled romaine hearts as well as other BBQ links. In general I miss barbequing in the summer - not so much missing BBQ meat but just chilling while poking the grill from time to time on a nice day

I'm going on a hike for two days and I'm not going to have any refrigeration or (most likely) cooking facilities, and would prefer to have anything too heavy to carry. Any recommendation?

I've done ultralight for awhile. Bring an empty peanut butter jar and use it as a method of cold soaking things while you're hiking. Make little baggies filled with your preferred dry grains/beans and seasonings, toss it in the empty jar with a cup of water, walk/sleep, crack it open when you're hungry. It won't be a nice hot meal but that's the trade off for not having to worry about cooking gear or where you're allowed to make your own fire. I was also able to fit a week's worth of food in a bear canister that fit in my bag no problem. Lazy options also include nuts and dried fruit, tortillas and your choice of nut butter, and a bunch of commercial options (fruits sauce packets, dehydrated food, bars). Vegan dehydrated camping food packs tend to be much pricier and still require boiling/hot water.

Cold soaked oats with dehydrated coconut cream, dried fruit and cinnamon is pro tier ultralight hiking food. Just soak overnight and breakfast is ready when you get up. You can even put instant coffee in there so you don't get headaches as caffeine withdrawal kicks in.

Steel cut oats usually require more than 8 hours, so you have to start your soak right after dinner. Rolled oats are easy and could probably soak for like 5 hours. I didn't try anything like pearled barley or farro. I stuck mainly to rice, couscous, and quinoa.

There are lots of through hikers that do things with dehydrated beans too but those things are impossible to get here in Australia so I can't comment on what works well there.

Re: grilling, I made Michael Solomonov's cauliflower shawarma (from Israeli Soul) over the weekend and it absolutely slaps. It occurs to me that instead of brining and roasting the cauliflower, you could brine and grill, or even better, smoke it. Cut up the smoked cauliflower into florets, crisp them up in a cast iron pan with a little oil, and serve them as a pita or wrap with tahini-garlic sauce, chopped vegetables, pickles, and hot sauce? That would be an amazing sandwich. (The recipe doesn't seem to be online, but there are many cauliflower shawarma recipes out there. I won't recommend any particular one as I haven't tried them.)

Sorry about the sub-optimal photos, but this is what I made for dinner last night: It's an adaptation of this koshari recipe (lentils and rice, spiced chickpeas, a sour tomato sauce and crispy fried onions; more of a mujadara, really), and this fatteh batenjan recipe (harissa roasted eggplant and zucchini, a yoghourt, tahini and mint sauce, and crispy pita). And this for dessert: It's based on this Focaccio di Recco recipe which I adapted into a dessert of cinnamon- and nutmeg-spiced blueberries with sour cardamom cream cheese. Both were ever so good.

Hey Vegan thread, thanks for all the recipes so far it's been a lifesaver on upping my cooking. I have a specific request for a friend who's got their teeth fixed meaning they can't chew food for roughly a month, so i'm looking into interesting ways to keep it from being super boring. Good breakfast smoothies, very fine pesto they can just swallow, some puddings, etc ?

Protein shakes were really nice too. Or add protein powder to smoothes and oats. Yoghurts, puddings and other desserts like that are great. Honestly the biggest issue I had to overcome was caloric intake. It loving sucks to suck on liquids all the time and you can easily lose your desire to eat. I basically survived a 10-week jaw wiring on soup, and porridges. (It was winter, though, so I wasn't too interested in smoothies.) The good thing about veggie soup is that changing herbs and spices can turn the same vegetables into an infinite number of soups. Adding pesto + yoghourt, or miso to a soup is also a wonderful way to change the flavour. You can also add beans, lentils, barley, rice, etc. which give them a lot more body and blend up really nicely. This broccoli, pea, and miso is my favourite that I actually have a recipe for. I bolster it by adding white beans which don't effect the pretty colour. Other favourite soups are pumpkin (pesto + yoghourt is particularly amazing here), spicy red lentil, curried cauliflower, carrot and coriander, and sweet potato with Cajun seasoning and black beans. As has been said, soaked oats make a wonderful base for a smoothie. Current favourite smoothie is coconut, pineapple and mint. But smoothies are infinitely variable; you can't really go wrong with them. Seconding porridge also. You can also make incredibly delicious savoury rice porridge; add some finely diced, well cooked veggies, silken tofu, some sort of spicy bean paste, soy sauce, etc. etc. Chilli and curries can also be blended without ruining them. There are also a ton of recipes out there for what I'd call a "traditional pudding" (in British English). Basically a steamed or baked self-saucing sponge-based pudding. They come out soft enough that you could just mush them against the roof of the mouth. Serve with custard or ice cream. They're generally not effortless, though, but if you're friend gets bored enough... And yoghourt, jelly (jello), tinned fruit, etc. aren't the most exciting food options, but they're nice as an occasional very low effort snack. e: Sorry I can't provide any actual recipes.

Apologies if this has been asked before (I did search the thread but it is big and packed with many beautiful recipes), but does anyone know of a good site/resource for vegan dessert and cake recipes that is NOT also gluten-free/'healthy' sugars/weird grains? My mother's a vegan who loves cakes etc but does not give two shits about anything else, since she's vegan for ethical not health reasons. So many sites seem to pile every other food intolerance and exclusion on top of being vegan and it's tiresome when you just want a big ol sugary fatty vegan cake.

I've been really into making pies and galettes lately, so my favourite vegan dessert involves replacing the butter in Martha Stuart's pâte brisée recipe with vegan butter alternative, and proceeding as normal from there. The greatest dessert of all time, baklava, is also vegan if you use oil instead of butter. I'm not a big baker of cakes or biscuits, so I've only tried this with banana bread (and it was a pretty decent success) and it might be a loving disaster. But has your mother tried just searching "X vegan alternative" for each non-vegan ingredient and seeing what happens ?
