No differences so far though.

Ice distillation you quickly get stuck behind economic walls of further freezing as you quickly approach the -150F to -170F freezing points of the alcohols so that you usually get one separation at like 0F if you stick it in a normal freezer/snowbank. You can melt the ice chunk and do it again to the ice chunk to get more, and try to cool off the liquid even more beside - this would be multiple stages and it is just kind of a bother.

Vapor distillation all happens between 130-212F so if you can boil a kettle you can get a continuous distillation through the whole range allowing you to take or throwout the results at various points of the curve.

Besides that we can throw in staging much easier than freeze distillation. If you run this through a column, the temperature is going to be different at the top vs bottom as it just cools of from ambient air or if we drip down some of the cooled off liquid coming out the top. This translates into doing the separation multiple times in sequence especially if you add hardware and surfaces to the column to promote mixing of the falling liquid and rising vapor. This effectively laser focuses what's coming out the top to help you throw out exactly the bad stuff and keep the good stuff.

Apple brandies are far more controllable methods of getting apple cordials for this reason but there's something of a traditional taste to applejack made from a decent must and controlled fermentation that isn't the same for better or worse.

Neat. I'd known about how refineries use fractional distillation to separate gasoline/diesel/etc from crude oil but never realized you could use it for booze. Even worse, when I learned how to do it in chemistry class we were probably using ethanol and water.

I can confirm that a good Eiswein is lovely - it's thick and sweet, preferably balanced with a fresh lemony acidity, dark yellow, and a little glass for dessert is more than enough. If you see one on the menu, and it's not stupidly priced, it's worth trying just for the experience.

It's different from, but ends up very similar to, the noble rot (botrytis mold) wines: Those are made from grapes with a specific mold that makes small perforations in the skin without really affecting the insides. That allows some water to evaporate, so you end up with grapes that are kind of halfway to raisins - concentrating the taste and sugars more like a normal destillation.
(There's also an old and traditional, but uncommon, variant where you just let normal healthy grapes dry on the wine before harvesting, which takes a lot more time and heat.)

The other way to make a wine that's reasonably strong but still has some sugar left is to start with a normal wine process, but add a strong alcohol before the fermentation has used up all the sugars - which is how you get port wine and madeira.
