I want to say China is cool and good but as long as the Uyghur genocide continues and Xi concentrates power, it wont. Hope China becomes a better place for everyone. Taiwan is extremely cool and good and I want to visit when all of this blows over. I dont really understand the posting vendetta against this thread.

i live 1.something miles from sfo these days and its been a weird experience watchin the chinese restaurants, of which there are 30ish, compete. i think i have mostly identified mainlander vs abc hk and taiwanese peeps by random amounts of christian iconography in abc peeps stuff solid fujian food, harbin food, hubei food, henan food, 3 dimsum dealios, hk dealio w stupid disgusting borscht and macaroni and actually good hk food, ordinary canto guangdong food ofc, and one sichuan specialty dealio in an absolute dump of a location with sketchy newspaper thingies in front and inside the chef dude has won multiple world culinary awards for sichuan food lol also the payday lender vanished overnight and got replaced by a place that seems to do a as-close-to-a-chinese-wealth-management-dealio-while-still-ostensibly-complying-w-us-law dealio with great production quality on storefront and no fuckin website, also offering sketchy trusts. i think the most outrageously chinese financial institution i have ever encountered outside of asia bob dobbs is dead fucked around with this message at 09:03 on Jul 2, 2021 |

I've got chuar locked down, but am feeling more adventurous since I'm going to be butchering two. One is going to be done western style and my wife wants to do the other Chinese style, but has never attempted such a feat. It's the whole lamb (110lbs, dressed to approx 50lbs) so there are lots of options. I'd prefer your personal experiences rather than my first results from Google. Thanks.
