Saffron is nice, but you can sub tumeric (not a lot, just enough for color) or yellow food coloring and as long as you're using clam juice + tomato base + peppers and salting enough (or using plenty of chicken broth) you'll barely be able to tell you didn't use the saffron. Instead of fresh clams, canned clams are totally fine. My family was relatively poor for a period of time and we used chicken + frozen peas + sliced peppers + canned clams as the mixins and it was great. EDIT: gently caress, now I want paella real bad. Last night was midsummers eve. Big deal in Finland, 2nd biggest holiday after Christmas. This means we got together with the extended family and ate typical finnish midsummer food, various grilled meats, various kinds of fish and most important, new potatoes (from our own land). The sauce is a local dish I've not seen elsewhere, it's a cold sauce. Whole cream, salt, pepper, chives. Combine in the morning and let sit in a fridge until dinnertime. I recommend trying it, dead simple to make.

I don't have a shot of assembly. My partner is vegetarian so I pretty much never bother with this but then I saw how cheap a whole chicken was. I made a jus out of chicken demi glace I had in the freezer, white wine, lemon juice, butter. It was incredible. Now I've got a lot of material for stock.

I tried cold frying french fries for the first time last night. It worked out pretty well, but I'll probably just stick to air frying frozen fries because now I've got a half gallon of peanut oil in my dutch oven to deal with. Also picked up some Hardcore Carnivore Black seasoning while I was at Academy and tried it out on some steaks. I'm pretty happy with it.

Had some friends over for the first time since covid, went all out with pasta night. Garlic bread with four different pastas and four different from-scratch sauce pairings: Spaghetti with tomato basil sauce (vegetarian) Fettuccine Alfredo with shrimp Gnocchi with basil and pine nut pesto and roasted chicken breast Mostaccioli and bolognese (Kenji's of course) That Bolognese recipe surprises me every time with how good it is
