Last night I had a sandwich with buffalo chicken deli meat and cracked pepper and olive oil Triscuits and sliced pepperjack cheese. I know how lazy this is but I bought sliced cracker sized cheese but it was the same price as block cheese, probably a little less cheese you get though.

I'll probably have the same tonight. I'm not up to cooking lately.

Upset Trowel
Last night I had a cup of cottage cheese and that's all I ate yesterday. I don't know why but weed makes me not hungry. Kinda sucks.

Tonight, hopefully if I have the motivation, I'll be making a German skillet. My mom used to make it for us as a kid. It's sausage (polish actually), potatoes, and sauerkraut. It looks like German slop but it's good. I'll post a pick when I make it.

I'm feeling a bit under the weather so I won't be making my German skillet again. Maybe tomorrow. Tonight I'll probably have microwave Tasty Bite Indian fare and some cauliflower rice or brown rice with kale. They expired but they're in retort pouches like MREs so it might be fine. I'll to the smell test.

The secret: sodium citrate.

1 cup of water to 4 cups of cheese, to one teaspoon of sodium citrate.

Boil water, stir in sodium citrate, reduce heat to medium and fold in whatever cheese your heart desires, one cup at a time.

The particular chemical nature of sodium citrate vs regular salt acts as an immulsifier to the cheese, breaking down the protein bonds or whatever that make it stringy.

Summary: make any cheese into a cheese sauce, instantly. Use as desired.

there's probably a proper french name for that but i dunno what it is.
