Derpies posted:How do I deglaze a ham, asking for a uh friend Deglazing is fairly simple, but it's not really something you do to the meat itself. The idea is that when you fry or roast meat, the pan will collect a coating of browned meat juices. If you dissolve that in a liquid, it can make a tasty sauce. Glazing a ham means that you coat it in a sauce while it's baking in the oven. Not something I've done a lot of, but basically you coat it in a sweet sauce that can caramelise a bit. Honey mustard, something with maple syrup, or a brown sugar based barbecue sauce, maybe? The details depends on the ham - raw, cured, smoked? Already marinated in something? Already boiled, so you just need to brown and reheat it a bit? Most British recipes I find suggest boiling a ham first, to do some of the actual "heat until safe" part, then putting it in the oven to brown, pouring over the sauce when there are 20-30 min left. However, I'm not sure that the hams they are working with match what you have. Computer viking fucked around with this message at 00:32 on Sep 3, 2021 |

Honestly, "boil in for a bit to gently raise the temperature, then finish by roasting" does not sound half bad - but then boiled ham (without the roasting) is sort of traditional where I live; I may be biased.

One of the few food related things that bring out feelings in almost everyone over here is how to roast the pork belly for Christmas - you want some spice, tender and juicy meat, and the skin turned into fluffy pork scratchings. There are all sorts of methods, like doing the first half tented and with the skin down into the brine, and then flipping it to finish skin up on a grate over the brine (so the mildly boiled skin crisps in direct heat while the meat steams). Orange juice is a common additive. My dad gave up one year and crisped the skin with gentle use of his paint-stripping hot air gun. Worked surprisingly well, tbh. Some people have salted cod. They are heathens.
