the whole loving point of Papers Please is that ordinary, not-evil people will do evil things to protect their loved ones. the protagonist has three choices at the beginning of the game: work, starve/freeze, or get shot. it's easy to sit in your armchair and go "death is preferable to evil". the majority of the people saying that will never face a choice remotely like this and they know it. i don't even want to speculate about what i would do if i was really in that situation. it's an impossible question.

a shame, i had some really good times with it, but until it's restored somehow it's not really worthwhile (and then there's the question of how to restore it without bringing the pedo problem right back with it)

Eh, you're skipping some stuff that was important and funny.
AI Dungeon is run by a company called Latitude. Latitude license the AI that makes it work from the GPT foundation. Latitude trained their AI with pretty much all the free text it could find online from gamefaqs, to project Gutenberg, and even erotic fanfiction sites. This meant it had a ton of gross porn stuff for reference and would pull from it for completing prompts. So much like SA had load bearing slurs, AI Dungeon had load bearing IP infringement and childporn.
Their initial solution was just setting an unenforced TOS telling users not to do illegal things like IP infringement or childporn with the AI, but with a wink and a nod that they're not reading what users privately write.
GPT got mad, because their AI (and servers) still had a bunch of illegal poo poo going through them from Latitude including IP violations, hate speech, and childporn. So in order to keep their license Latitude set up a new system of monitoring if user content had childporn that was radium tier "here's a list of associated child words, here's a list of adult words, if a story has both, it's potentially childporn, flag the account that generated it for review."
Because the review script was bad it created a ton of false positives, including pedos intentionally triggering the script with banal things in protest. Rather than retrain the AI (because that would require a ton of rented CPU time and some degree of human sorting of what to include and what to exclude) they just inserted a few more parsing scripts which both slowed down the AI, and frequently made it 'give up.'
The pedos were real and gross, but ultimately what broke AI Dungeon was the owner's incompetence and laziness -and desire to make money off the pedos.
There's a lot more zany stuff, but this post is already way too long for low quality zork but requiring bitcoin levels of processing power.

All I know about A.I. Dungeon is that a friend of mine who's trans was using it to write self-insert erotica with some weird kinks she was very self-conscious of (no, not pedophilia) as her way of trying to sort things out in her head. She went in assuming they were private and then after all this happened she got a message that they were all being reviewed by a real person and she had a loving panic attack.

The perspective of a FPS is first-person perspective because you are seeing the game from the perspective of the subject (the central character or "first person"). This differs from third-person perspective where you, the player, have a different perspective than the subject (eg. over their shoulder or far above the battlefield). Your hypothetical "true first-person game" would also be third-person if you're still controlling the protagonist because you're seeing their actions from a perspective outside of them. If they're fighting an enemy and you're watching, you are the literal third person in that scene. If you're not controlling the protagonist, just a camera operator following them around, it's first-person because you are seeing the game from the perspective of the central character (ie. the one you're controlling).

Second-person perspective would be something weird and mostly unplayable like seeing the entire game through the eyes of your opponent, I guess?

Yeah, that's one of the details I skipped over. So that flagging thing required manual reviews of the story in question, and also the other stuff on your account. As I said, because the flagging system was basically worthless it got a lot of stuff flagged and generated a ton of stuff to review.
Instead of doing it internally Latitude farmed it out to a mechanical turk service. Their contractor didn't encrypt anything, and the stuff got leaked. So basically not only was everything your friend wrote being reviewed, it was publicly searchable.
Not in a way that say tied it to a user's account or credit card info, but in a case like your friend who used her own name/self insert stuff people could search for her name and find those private stories.
Latitude denied the leak happened, but people were able to prove it on reddit by saying "Give me 2 lines from your story, I'll tell you the next" and giving accurate details.
Like at every step for handling the situation Latitude did the worst thing possible, and had almost 0 actual dialogue with their users. They just went radio silent for a few months.
They also didn't disclose stuff was being sent out and reviewed/read when they rolled out the "stop the drat pedo poo poo, we've got a script that will block it" rules, until after they started sending stuff off for 3rd party review.
So like your friend absolutely could have just been getting her jollies, was following the spirit and word of the rules, unaware that because the monitoring system was overzealous anything she wrote before or after that was being read.
