What happens if you use too much fat in your burger mix? Is it just too delicious?

Also I've been watching a lot of Gordon Ramsay recently and he mixes all sorts of stuff into his burgers, where does the thread stand on this? On the one hand I've read enough here and watched enough youtube to think bad, on the other hand Gordon Ramsay?

Searching "Mythical Kitchen Gordon Ramsay" on YouTube will sort you out. TL;DR, Josh puts Ramsay on blast for poo poo opinions and shittier cooking.

Turns out British and French cooking are dramatically different from American, in terms of method and expected result, and some people should just stay in their fuckin lane, bro.

What this sausage party needs is a big dollop of ketchup! Too bad I didn't make any. :(

Burgers with things mixed in are just sausage patties and that's fine.

To all of that though, I say you should just make a burger sauce with the flavors you want to add.

Biting into the bacon burger I ordered and realizing it was a burger with bacon bits mixed in, not a burger with a moderate amount of bacon as a topping, was a very unpleasant experience.

I put a couple dashes of soy sauce or Worcester sauce in when I buy real cheap lovely mince from the supermarket to burg with

I mean if you're using supermarket mince, IMO do what you want. Egg, breadcrumbs... hell throw goddamn fried egg and beetroot slices on there, call your flip flops thongs, and start referring to all of your friends "as C**ts", but affectionately, for all I care.

Just y'know, don't try to market it as anything other than a means of stopping your hamburger from falling apart, because you used the wrong meat.

I cooked down some onion and then rested it atop a smashburg. I pattymelted (aforementioned onion, american cheese, bacon, mayo), but did not stop to take a picture. Ate it hunched over the sink in my suddenly smoke filled apartment. Sweet, rich, and beefy. As all things should be.

I’m saving this for the dust jacket review.

Pan is this guy from Amazon - works well but does limit the width of the buns. Next step for me is to work a V2 of the sourdough bun recipe with some potato flour and such to soften it up a little.

Nice. Do you know what pre-rise gram weight dough you're using for each bun?

That's a beautiful finished burger and bun!

I have my own recipe on my site, but honestly you should look into the King Arthur recipe that I based mine off of if you want tips. I've used that King Arthur recipe for anything from burger buns to hot dog buns. The dough is just very easy to work with and they stay soft for more than 4 or 5 days.

First smash run on the new griddle. Last minute, nothing fancy. Supply chain problems with the american cheese so we went with cheddar.

Round one, smoked pickles.
