People are often huge pricks to vegetarians though, mostly by accusing them of hypocrisy or of being sanctimonious. I can understand a person being frustrated by that and just wanting to make a direct moral statement about why they are a vegetarian.

Vegetarianism is actually super easy to plan around if you're trying to like grab dinner with a group. Veganism is a little trickier but there are plenty of other dietary restrictions that are just as bad, like for example my mom decided she was gluten intolerant at like age 60 and it is a huge pain in the rear end

Oh yeah I know vegans and it’s easy enough to find vegan dishes when I have them over or to just go to vegan restaurants if we’re going out. Vegan food that’s generally available is a lot better than it was even ten years ago. Not that it wasn’t always pretty great if done well, but I mean there’s a lot more options that do it well these days

My wife's family is sort of like this (they have an insane patchwork of diets, allergies to common foods and dislikes that I can't begin to follow) except instead of being annoying about it the host announces what they'll be making for any given gathering well beforehand. Then everyone who has any problems is welcome and expected to bring their own food. It's actually kind of nice, because when you have the extended family over you don't need to fret over who likes what, just make whatever strikes your fancy and everyone will roll with it, no hard feelings. It seems like the sane and obvious thing to do, which I guess is why a lot of people don't seem to do it.
