This is exactly what I did. Learned smoking on my kettle using the charcoal baskets and the minion method (unlit coals in the basket, light a few handfuls in the chimney, and dump on once ashed over). Didn't need the Slow N Sear :shrug:

It's tougher to control the temps consistently, but you get the hang of it.

Thermoworks. Smoke if you don't need wifi right away (there's a separate wifi relay), Signals if you want the whole shebang.

e: Or Dot if you just want a single probe.

I have this guy so I don't have to constantly go up and down stairs to check my temp without also having to spend a fortune on something that has to link to a phone. I didn't care about fancy temp graphs, I just wanted an alarm to go off if my coals get too hot or cold.

Seconding the signals. It's nice if you want to do different types of meat at the same time, and it's drat convenient to be able to check the temps remotely

Each one comes with two probes; if you're doing a single item, then one probe for the meat, one for the pit.

When I do porn shoulders, I do 'em a pair at a time (half of one is eaten immediately, the rest is split 3 ways, vacuum-sealed, and frozen for when I have a hankering for BBQ but am not in the mood to smoke). Wireless range seems fine, but since I live in an apartment I haven't exactly put that to the test. Still, nice to be able to see how things are doing from my desk. In this case I'm using three of the 4 possible probes; 1 unit is for meat, the other unit is pit temp.

Speaking of porn shoulder, I just threw 2 in there because I have a complicated (read: problematic) relationship with sleep and decided I felt more like BBQ than sleep today. Price was about 50% higher per pound than I had seen in the last year, so that was a bit of a surprise. Still a reasonable price all things considered, but not what I was used to :(

I'm going to try not wrapping this time, stopping at 190 instead of 203, and keeping smoke in the unit all the way through. We'll see if I made a mistake or not!

I’m going to try a pork shoulder for pulled pork tomorrow. I have two 7 lb cuts I got at Costco.

If I want to eat around 4 tomorrow, what time should I throw one in? Additionally, can I cut one in half to reduce cooking time? I know purists would likely frown at that idea.

I wish I could give you an answer on time. I typically do 9-pounders and it seems like it takes anywhere between 12 and 16 hours. Wrapping can certainly shorten the time, as can adjusting pit temp higher. You can almost hold the thing indefinitely after cooking (not really indefinite, but resting after the cook is pretty important, and you can make that last just about as long as you want it to).

The way I see it, cutting it in half ups your bark:meat ratio, so if you're really looking for more bark flavor then I could see it being not-sacrilege.

All that being said, I don't know what kind of event you're shooting for, and/or how firm the 4pm time is. I also don't know how much sleep you're requiring. If it were me, and I felt like it was absolutely imperative that I hit 4pm, I'd probably start at 4am and if I was done early, just find a way to let it rest (cooler+towels or even in the smoker itself with the temp of the smoker set to something like 130 so the meat temp fell REAAAAAAAL slow, with the goal of not letting the meat fall below 140 internally).

That's a lot of words and not a lot of sleep. Also, I feel that I haven't really dialed in a process that I could reasonably estimate timewise, I guess, so take it with a grain of salt. I just know that my cook times always seem to be much longer than what I see the internet call for, for some reason.

Thank you. That is all very helpful. We just have a couple friends coming over and the only reason it can’t go too long after four is they have an infant and the visit is planned between naps and bedtime.

I think I’ll just get up at 4 and workout or something and nap later.

I smoked my first brisket overnight. Pretty happy with how it turned out. Not the best I've had, but still good, and if it's the worst I ever make, I won't complain.

I was smoking with a little MES smoker with a smoke tube until the MES broke. I'm lazy and so bought a Traeger grill and struggled to get anything slow smoked to where I wanted it. I knew the probe that came with the grill was off by 20 degrees so decided to splurge on a Thermoworks Smoke. I now realize the internal ambient probe was also off by a staggering 30 degrees. So those ribs I thought I was smoking at 225 were cooking at under 200 and is why it took 10 HOURS to come to temp.

The Thermoworks is obviously quality construction and a good buy.

That used to be a shelf in my fridge. The main one, naturally, not like the top shelf that just holds beer where I could just park the bottles somewhere else for a bit. Sadly they are not interchangeable.

Both good and bad: It happened in the sink while cleaning it, so it was completely contained (no tiny bits of glass everywhere with 6 cats). But it happened in the sink, so I had a disposal full of glass fragments. It's cleared out now but I have to go get a tool to un-jam it.

FML. We have company arriving in 6 hours and this place is still a mess.

We have a plastic shelf that goes in the door on ours that broke. I think maybe the previous occupant of this apartment broke it, and it finally failed when we put something in it.

"Alright, whatever, just order another one. What can it be, $20? Get two or three, there's enough room and slots for several".

loving $90 for one stupid plastic tray that sits in the door. Yeah, I'm gonna need to get some glue and clamps for this one . . .

If it's your main shelf, you'll probably wanna go to a dedicated glass place for a piece of tempered glass for the improved strength. Good luck.

I actually got lucky. There's a place that sells replacement parts that happens to be based in Davie, FL, i.e. only like 2 hrs south of me. I ordered it last night and it'll be delivered tomorrow, so I'm going to hack something together from the busted shelves that collapsed in our master bath closet in January. I would have just driven down myself if my wife didn't have to be on campus proctoring exams all day (we went down to 1 car last year since I work from home and having 2 is such a waste).

Only $26 plus shipping, not terrible considering it's tempered glass of a very precise size.

Also glad I'm not the only cat lunatic. We too have 6. They can gently caress right off my chicken.

For now the wire shelving will get me through two days. It was the insert that goes into the cheese drawer structure thing, so I can just rest the wire on top and it'll hold for a day even if things might not be perfectly level or whatever.

Also I read this initially as "they can gently caress right off my CHILDREN" and was like drat right. Never having kids, these are our children, our mothers have made their peace with this reality.

EDIT: I made it work, that'll hold for the weekend.



And it's good enough for this huge-rear end brisket I just picked up.

Spent yesterday smoking up a brisket for a friend's going away party this evening. Put it in at 7 am and pulled it at midnight at 203 F. Been resting in the oven on a keep warm setting since then.

The thing I'm most excited about is the cherry chipotle bbq sauce I made from scratch. Cherries, onion, garlic, canned chipotle with adobo sauce, then cherry juice, soy sauce, and apple cider vinegar for the liquid. Smoked the solids for 10ish hours before adding the liquid for another 2 and pulling it.



Then I remembered one of my buddies is a celiac and can't have soy sauce. So I was forced to smoke a cherry, tomatoe, and apple bbq sauce this morning.

I just roast mine clean. It's usually as simple as letting my smoker burn out with all vents open at the end of a cook. Completely hands free.

This was my best one yet. Used the same rub but this time a mix of Apple and Mesquite woods.





So amazingly flavorful and juicy. This time so much more of the fat rendered down, especially that middle layer between the two muscles.

I've been looking at getting some kind of grill/smoker and it doesn't seem like the specific sort of thing I'm looking for is on the market. What I'm hoping to find is essentially a propane grill with an offset box and a valve that lets you either put the gas into the main chamber to use it as a regular gas grill, or switch to the offset box to fire wood chips and have it function like an indirect heat smoker. Searching for products online has turned into just a bunch of blogs all advertising the same paid "6 best grills/smokers of 2022" and it's getting me nothing like I'm describing. Does anyone know if this product exists, or is it all just pellet smokers, traditional gas with a wood box thrown in, or charcoal, and all combinations are essentially just separate grills on a shared cart?

I'm sure this has been asked in here, but wanted to see if anyone has had experience with the Char-Griller 980? It seems to be pretty well liked and recommended more over the Masterbuilt gravity smoker, and I like the idea of using charcoal and wood chunks vs. pellets. It seems to generally have positive feedback, but there are also several comments and reviews I see that mention some subpar quality on parts (a silicone flapper in the bottom of the hopper I think) as well as the app and the wifi being crappy. It looks like these were around 4-500 last year and the price has shot up to $750. This is what I've had in mind for a while and have been reading more reviews lately as I'm ready to pull the trigger.

Anyone have good/bad experiences with this one?

I mean this thing can only hope to be replacement for an electric smoker, but being able to smoke inside is a neat trick. A toaster oven and smoke gun will have your place filled with smoke very quickly, so I think you aren’t considering the containment and elimination of the smoke.

I doubt the ability of the catalyst to prevent smoke exhaust.

They’ve done the same thing with coffee roasters and those don’t seem to work that well.

My guess is that when you open the door, you’re going to smoke out your house unless the pellets have been completely used up. It also looks pretty small.

More surface is great for bark, but its also more surface for moisture to evaporate from. There are recipes where maximum bark is the goal like burnt ends, but they cook much hotter and faster to minimize moisture loss.

Those big cuts have lots of connective tissue that make them tough. Low and slow cooking is required to break down those tissues and turn them into meat butter. Cutting those pieces into smaller bits will make them dry out faster and turn into tough chewy briquettes.

This is why you can take those tough pieces, break them down into small chunks, and stew them in liquid, or wrap them tightly in foil to maintain moisture, and still get a tender product. However, smoking for long periods is better for big pieces.
