It’s kind of funny that Elden Ring names a dude the loving Dung Eater because besides the name the game is selling him pretty well as a mean, sick son of a bitch that I’m probably gonna have a bad time meeting but he’s literally called the Loathsome Dung Eater, like drat.

Placidusax is the one chilling in Farum Azula so you can always go back and fight him if you want. You're thinking of Lichdragon Fortissax.

I don't think you can break her quest, just at some point the game just acts like you did it and she moves to the later area you find her.

Yeah, none of the "different ending route" quests can be broken or truly missed. One of them even has extra dialogue for if you do things out of order or miss a step. The thing with Fia's quest is that even if you do it "right" there's a part where there's just absolutely no indication of where to go to continue it.
