Wikipedia gives rules for a version with a bank, which I've never seen, it's always been winner-take-all with everyone throwing in a couple bucks from their tips. People would make side bets with each other sometimes but that was the extent of it.

What was that dice game Zatoichi is always playing in his movies? He would put a die in a cup and flip it over onto the table so the die is covered. Then everyone bets on even or odd. Back to your turn, you could change things up by saying, "Three fours," and then seeing if they call you or play off of you. I believe 1s are wild up until someone says, "X ones," and then they become static. Anyway, it rules and is both fast and competitive. The other popular dice and drinking game is what I call the "sausage bowl" game because it's frequently played at sausage stands in Taiwan. If you've played Suikoden, it's basically the dice game in that. You roll four dice into a bowl. If you get a pair, then you add up the value of the other two dice. Then the other player(s) rolls to beat your score. There are specific number combinations that give you better results. Lowest score drinks. Or, if you're playing at a sausage stand, you get delicious Taiwanese street sausage at a discount for beating the vendor.

I'm surprised more people aren't familiar with liar's dice because it was a minigame in the first red dead redemption, and was featured in one of the pirates of the Caribbean movies iirc

There are some minor variations based on where in China you're from but overall that's exactly right. I have a friend who always gets put in difficult positions and always called out so he drinks way more than everyone else, it's really funny.
