I'll recommend some of the ongoing tournament fighting manga like Record of Ragnarok (Shuumatsu no Valkyrie) and Tenkaichi: Battle to Decide Japan's Strongest Martial Artist (Tenkaichi - Nihon Saikyou Bugeisha Ketteisen). There was also a josei witch fighting tournament I was reading but I can't seem to remember it.

Outside of Seinen I'll give a hearty recommendation for Frieren: Beyond Journey’s End. There's also some good completed shounen series like Chainsawman, Hell's Paradise (Jigokuraku), and Promised Neverland.

Dead Dead Demon's Dededede Destruction by the Punpun guy. I read somewhere on this forum that this perfectly encapsulates the casual bleakness/hopelessness of Gen Z and as someone with a Gen Z sister, yeah it's great.
Girls' Last Tour's ending has stuck with me for a long, long time.
My Dress-up Darling is great series that once you get past all the fanservice (or you can be into it you do you). Its anime just finished airing but the really great stuff that touches on a lot of gender performativity comes after what the anime covers.
Echoing the recs of Delicious in Dungeon and Frieren: Beyond Journey's End (last one isn't seinen but whatever). Also Blank Canvas but I can't bring myself to finish it because it's going to destroy me.

Alice in Borderland is also required reading if you want to see the death game genre, but want one that has actual substance to it beyond just killing characters cruelly for shock value. It got a netflix adaptation I'm not willing to recommend, stick with the source material on this one.

Got some real Battle Angel Alita vibes from this one with the setting and how generally messed up everything is. Any other interesting manga in this setting?

I wasn't planning on reading more than a chapter of this, but was taken by how stunningly screwed up the main character is. Unfortunately, the ending is anti-climatic, and Alive was nothing more than a prop, but I did find myself constantly wanting to know what happens next.

This series surprised me when I started reading it because it finds a sweet spot for me between degenerate characters and actual substance. Plus Gawain as the focus of that leg of the tourney had a lot of payoff and he got a cute family out of it all

Lol it took me until chapter three to realize the shape of the sword

I don't think the art style is that great aside from the honed porny human proportions, but it has the same firm grasp on bodily distortion and viewing angles perfect for dynamic actions scenes as, for example, that Valkyrie tournament manga i forgot the name of. And while the backgrounds are basic, they show some effort into researching material for medieval townscapes and architecture and aren't half-assed, which would've been easy to do since the focus is obviously on "organic" stuff.

Thoguh i gotta say the thigh holster for the axe is loving sick, i love it
