I've been trying hard to gain weight while working out on a very strict budget and pretty much switched to full vegetarianism over the last 6 or so months out of necessity. The old easy budget workout mainstays of chicken breasts/fish just ain't happenin anymore. Had to throw my meal plan out the window because there's no way I can afford that much chicken or fish. Tofu, dry beans, oats, cottage cheese and rice remain pretty much the same price. Lots of peanut butter. All these things in large, miserable quantities.
