I haven't seen much randomized pokemon, how randomized is this? I know with Link to the Past at this point they can go real wild: Shuffled entrances (that aren't bidirectional, so out is not the same as in), shuffled rooms in dungeons, etc.

I don't think they shuffle the dungeon layouts bu tthey'll shuffle all the trainers and gym bosses, and in this case I think they're doing the 'pokemon randomly evolves every level' so the runner doesn't always know what pokemon they're going to have. It's more about 'how to make this random pile of stuff I have function' than it is a LTTP randomizer, where they're trying to find a path through the item randomization.

Yeah, I think the ones where you really have to adapt on the fly like this are my favorites. Pretty sure my 2nd favorite run all-time is LTTP crowd control from AGDQ20, but much of that was because Andy's couch were such hilarious assholes.
