Wouldn't those different types of wood have different density and water absorption properties? When they get cold/hot and wet/dry wouldn't they expand and contact at different rates as a result, loosening the joint over time? Talking about the clips with different coloured wood.

They stretch & shrink along the grain, so for most 90 degree joints the wood wouldn't push to separate the joint, just make a small gap that closes itself the next wet/dry cycle. Plus, glue can easily overcome the small effect at this level. The real place it matters is where long edge meets long edge, like where a tabletop meets the styles, or those "river" tables where they fill a long area with epoxy, OR when a piece is very long so the end can move appreciably like hardwood flooring which can't go all the way to the wall. The trim at the bottom of the wall hides this intentional wiggle room.
