I think they know better than to outright remake the movies, but they're definitely doing a lot that seems designed to "fix" perceived flaws in them. It's probably not something they're doing intentionally, but every creator is coming to the series thinking "I really love Star Wars, but..." and then adding something that addresses their own personal adolescent nitpick. Usually it's related to characters not being violent enough, so they add stuff like Vader becoming a slasher villain for a scene, Luke carving up a bunch of robots, Obi-Wan and Vader throwing a million rocks at each other, or Boba Fett blowing up a squad of stormtroopers.

That's probably exactly why they're doing it this way - Lucas' revisions are a really mixed bag, and even his Maclunkey parting gift made waves in the fandom. So instead, they're taking the safe route of technically preserving the original movies, but adding addendums that replace the originals in spirit. For example, I don't think Favreau and Rodriguez would ever agree to be involved with shooting a new scene for Return of the Jedi where Boba Fett crawls out of the Sarlacc (even though Lucas has said he would have included one if he knew how popular the character was), but it's totally fine to put the same scene in a separate show that's happening at the same time, but is just off-camera.

I think it's only a matter of time before they start fully remaking them. It's Disney. At some point in time the potential money they'd make will outweigh any possible fan backlash for tampering with their beloved classics or whatever.

Those sorts of nostalgia remakes seem like the sort of thing that Disney is already accomplishing with stuff like bringing back the old cast, computer homunculus Luke Skywalker, Obi-Win recontextualizing the OT, etc. Your suggestion that they can just stealth remake the movies by adjusting whatever part of the loose continuity needs changing in other projects without formally announcing a new Episode IV would seem to fit with that. Maybe if Star Wars actually dies at some point you could see remakes after a generation, but I'm not buying the whole once-George-Lucas-croaks-it's-on perspective.

Around the time Episode 3 was in production, there were rumors of a "Yoda Farting" scene in the movie, where he acted like a weird little gremlin to hide out from clones on Kashyyyk, including farting and/or making GBS threads himself to sell the bit. Eventually there was some concept art released showing Yoda covering himself in mud to hide out from the clones, and everyone assumed that the rumor was just an exaggerated version of a real scene. But then a couple of years ago, I heard someone who had worked on the movie mention how glad they were that the Yoda Farting scene was cut. It wasn't an exaggeration. It was real. Yoda shidded and farded and camed his pants in a Star Wars movie, and George Lucas' greatest crime was not Maclunkeying it back in there as a parting shot when he sold the company.
