I've never tried sour cream, but I find butter and a dash of milk is a good basic choice. The milk helps it not to be too dry, though you gotta be careful with the exact amount.

I'm on team potato masher as the best balance between outcome and cleanup, I hate cleaning stuff like ricers afterwards because it's harder to get everything out of there.
