I get the impression it is the squiggly bits of carrot you find as a garnish on a lot of South-East Asian dishes cause that's what the recipe looks like. I feel more intimidated by the inclusion of the banana and how it factors in. Maybe cooked plantains?

I thought it was a weird taco gimmick at first but yeah, you could do some dessert stuff with that, or maybe some other savory dish depending on how the seasoning works out.

Moroccan beef wraps. The mix in pumpkin spice, once you remove the sugar, isn't actually far off from that, which is why I noted it'd be a pretty good jerky flavoring.

I routinely make pumpkin and cream cheese enchiladas that these would be great for. Mix it together with chicken and black beans, a crapton of cumin, and smother the whole deal in mole poblano.

A meatloaf sandwich needs some good mustard and strong, sharp cheese. Meatloaf is got to be hot too - not enough to melt the cheese but just enough to make it start to sweat.

I don't think I've ever had bad meatloaf I'm not sure how you would gently caress it up outside of burning/undercooking it or adding inedible ingredients such as lye or miracle gro

Yeah, the meatloaf that comes out looking like that cookbook is why everyone thinks they hate meatloaf. Good meatloaf is worthwhile, I've never tried it in sandwich form though.
