indigi posted:talk about this it sounds more exciting than it was. just a family-run slaughterhouse and butcher in real rural west texas that ran entirely under the table. i dunno why the locals used this for their personal cattle instead of the stuff they were selling but i did it for about a month when i was passing through town like 25 years ago a lot of small local butchers in rural areas at that time had like box trucks fitted with all the works, they'd come to you and cut a carcass to order and you never have to see a thing. i heard of one that also did slaughter but i cant imagine how you would manage that with such a small space. anyway this place you had to bring your livestock and come back another day. they picked up help from time to time and that was me. they hired me in a bar its hard work both physically and emotionally, as you might imagine. they treated the workers ok. safety was non-existent which is true in the food industry as a whole. pay was good for the area, food was pretty good, the owners were kind, and the bunks were clean. sanitation wasnt top notch but it wasnt the jungle.
