I eat almost all of it. We consider it Iron Chef, vegetable version. (Except for the fennel!) We compost, so scrap outer leaves go there, and I grew up eating a lot of organic stuff, so I accept a broccoli worm or too. Some things we are still, 5+ years in seeking good recipes for (spring turnip) but fucket, you always can stir fry stuff in a pinch. We are two people, but in laws are close, I can stuff, and we have friends over for board games most Saturdays. Stir fry, soup, omelettes... We had an egg CSA in 2020 that rocked, doorstep eggs, but they are back to their normal model that involves driving to a store I don't live or work near. I need an egg hookup.

Hand ground curry paste take 2: prepared the lemon grass properly and got a fairly smooth paste although I foolishly left all the seeds in the chilis so I'm just eating this sounding like Louie Armstrong with a cough. Made a red curry with bok choy, bamboo, and veal stew meat a real "clean out the fridge" meal

For what it's worth, coconut milk, yogurt, or sour cream thrown in is a good way to reduce the spiciness. Lime or lemon works too. Though for that sort of curry, coconut milk or lime might be the best option. You can also just leave it overnight in your fridge and it'll mellow a bit.

We had a similar-ish experience with a recent meal train. Most meals were tasty enough and much appreciated for giving us time back with our newborn, but we preferred our normal cooking. Then a mom dropped off a meal where one bite was enough for us to go “Oh. Ohhhhhhh. That lady can cook.” It wasn’t anything extravagant, just chicken, rice, and green beans done exceedingly well. She’s the local curve buster for potlucks as well.

Like one time I was making a birthday meal for my wife. She was hanging out at the lake with her parents so I just went back to their house to cook a lentil shepherd's pie and a cake. The lentils were beautiful, the mashed potatoes were perfect and rich, and the cake was amazing even though I forgot to mix in some of the dry ingredients. I was working for several hours to get it all done in time and I got back to the lake just in time for dinner, felt good.
