I made the Thai Red Curry that's been mentioned here. I subbed tofu for chicken. It was amazing. I ended up putting way more red curry paste than the recipe called for.

If you haven’t done it before, making acid-set cheese, or QUESO fresco, or ricotta, or mascarpone, is fun and easy. I don’t think I’d use any of them for salsa con queso though.

I've tried to improve my burrito game, found bigger tortillas, learned to wrap them both ends. Great way to do it. My fiance can't get the hang of it, she just keeps piling on vegetables and salad until the best she can achieve is a "bucket".  Two smaller ones todays lunch, pan fried them in butter

Just made salmon Caesars. I fried up some salmon with a nice breading on it. It came out okay. I should have lowered the temp a bit and definitely should have flavored the breading more heavily as I was a bit on the light side of all my seasonings. I see people do like 8 different piles of different seasoning... I need to do that. Anyway it was good with a dousing of Caesar sauce to makeup for the blandness of the breading.
