The trick is to just carry a large bag or two so you can toss everything in there as fast as they can scan things. If you're buying more than that then you'd probably need to put them back in the trolley anyway

Pre sort your groceries as you take them out. Heavy stuff first, then go lighter/more fragile. Frozen and cold together.

Since the sorting and thinking are done ahead of time, all you have to do is shove the stuff in your bags as it comes down the belt.

Emptying your cart all willy-nilly with cans, eggs and bread all shuffled together is for losers.

You can slow down the cashier in a lot of supermarkets by strategically placing stuff from the produce section last, because it has to be weighed. That usually buys you the few seconds you need to finish packing and be ready to pay immediately.
