Yeah in my experience pork shoulders are good and cheap and used exclusively for some kind of pulled pork or stews that last well in the fridge so you can eat it over the course of days, not in a single meal like I assume Stav does.

He ate an entire shoulder over the course of one of those podcasting sessions where they went to a cabin upstate to do a bunch of episodes at once to cover the holidays. Over the weeks you could hear him progress from being giddy with anticipation while it was cooking to becoming grumpy from waiting. I know all the boys ate it together in one sitting but you know he demolished at least 50% of it.
