When I first ate a kebab with proper hot sauce that had flavours on it, my mind was blown. What, hot sauce DOESN'T have to taste like vinegar that's gone bad? In retrospect the kebab sauce was of course extremely basic stuff but still! Luckily things have improved a lot in the past 20 years or so and we have good local sauce makers even and tabasco has been rightfully relegated to the sewer as a garbage sauce.
