Thread, I have to admit I was wrong about something. Hot pot rules. I guess I just never had good hot pot before. The trick is to get the spiciest mala broth you can. Side note: after getting your mouth all numb, drink a glass of very cold milk. It rules.

Well to be fair bad hotpot is still ultimately just bad meat, wilted veggies, and some instant noodles boiled in a mild, herbal broth. It's really not all that interesting or appetizing and barely counts as a meal. Good hotpot is the loving bee's knees though. Give me that and a couple of large bottles of Leo chilled and I'm a loving goon in a blanket.

The idea that every other hotpot restaurant in the world is good is kind of absurd to me given the absolutely mediocre quality of food I've had in every city of every country I've lived in. Yeah, there are a lot of great hotpot restaurants out there, but the fundamentals are just hot water and cheap meat and veggie. Like I'm sure there are plenty of perfectly acceptable hotpot places that do entirely inoffensive hotpot, but you're already in an uphill battle when you're boiling meat and not grilling it, which is cheap and plentiful as well. When it's done well, hotpot loving rules. Mala broth is absolutely killer. But if the poo poo you're putting in the broth is low quality or old, or the broth is bland, it's really not a great time.

I do remember thinking I didn't like hotpot for a minute when I first had it a few times in Korea. Opinions were immediately changed after having it in China, I don't think I've had bad hotpot here. I do it at home a lot. I just got a nice, totally unnecessary electric hotpot pot thing, plug it in get going watch a movie and it's perfect. I get why people don't do it at home all the time, it can get kinda messy and leave a lot of dishes, prep time can take a while, but it's still so great.

I wasn't a fan of hotpot in Taiwan. A bunch of boiled food and salty water, and hotpot shops were more numerous than Tim Hortons in Canada. I was also biased against them because my favorite place had to change to yet another hotpot shop to make money. Since then I've come around on hotpot and eat it a lot at home. Not sure if it's the better ingredients or what.

Then you have to prepare the ingredients, which, for some just rip open a pack, for others not so much. Lots of chopping. The local place has a tomato broth that's really good. Obviously paired with the spicy broth. If you need a lazy sauce, just sesame paste. I've been hoping to find a conveyor belt hot pot place, for the novelty.

I was genuinely confused to read that people don't like hotpot, then I realized I've never had it in Korea or Taiwan, only in Mainland China. Also, I will say that the one time I had it in Guangzhou was not good, I kind of think the spice was toned down too much to appeal to Cantonese tastes. Much better in Beijing and (obviously) Chengdu and Chongqing.

Sichuan hot pot is the cancer of Chengdu. They are everywhere since it's cheap to run a restaurant where you hand people trash to boil in oil until it just tastes like numb. Most of them are terrible and there are parts of town it can be genuinely difficult to find a restaurant that isn't hot pot. Every time you want to go out to eat with your local friends it's hot pot. No one ever wants to go out for any food other than hot pot. Locals go four or five times a week. Also there was only one Vietnamese restaurant in the city and I made the journey there once, dreaming of pho, to find it had closed and been replaced by hot pot, which is where it went from just crap I dislike to being my eternal enemy. The issue I have with hot pot is that it's middle-tier cuisine, especially when most other Chinese food is delicious. Also someone always orders an oyster and then nobody wants to eat it so it just floats there for the entire meal.
