Made Eggs Benedict for dinner yesterday. Wife doesn't like Hollandaise so I had almost the entire batch on 2 poached eggs/ham/muffins. That's a stick of butter and 2 egg yolks.

Best Eggs Benedict I've ever had.

This weekend, for the first time, I made a 3 egg omelet with Lao Gan Ma spicy chili crisp. Plus a few halved grape tomatoes and a spoonful of cheddar.

I thought the chili crisp would pop more but it didn't. I also thought I used too much but I guess not. When I have it on crackers it has more texture and heat, I think maybe I neutralized it by putting in the middle of the omelet too late.

It was still delicious though. How do ppl add it to their eggs?

Maybe I've just never had eggs in my fridge long enough to make me think that they never expired. I think the longest I've ever had eggs in my fridge was like, maybe two or three months.

I said two or three months, it's not like I was keeping close track of how long it had been since I'd bought them. They did just seem like regular eggs though, with no weird smell, taste, coloration, consistency, etc.

It's like saying cheese lasts forever. Sure, it lasts a long rear end time and when it starts molding you can just cut it off, but the implication is it will be gone before it goes bad. Because cheese is awesome. And eggs too.

I'm a bit cautious though and throw them away if it's a few weeks after the best by date. Sad because I could just eat more eggs.
