One of the labs had a huge pot of Glühwein going. It's kept at ~70°C so the alcohol doesn't immediately boil off, but you could smell it in the entire building.

Laurel leaves are quite bitter. You want the aroma in your dish, but you don't want to extract the bitterness. Hence using whole leaves, not ground ones.
