I have been tasked with bringing cocktails to a small brunch (4-5 people), however there's one person that doesn't drink. Any recommendations for a mixed drink that would be 1) easy to make a side batch minus the alcohol 2) that alcohol-free version would still be tasty?

French 75s for the drinkers and fresh sparkling lemonade for the non-drinker.

Whisky Sours + Lemon-Lime-Bitters https://www.epicurious.com/expert-advice/how-to-make-lemon-lime-bitters-australian-drink In theory the Bitters mean it's not *truly* non-alcoholic, but its ultimately negligible.

What's the best clear ice maker for a fridge or are they all pretty similar? I don't have a lot of fridge space so the cheap igloo container hack is out, I'm just looking for a directional ice style maker for a housewarming gift. Thank you!

This takes a full 48 hours to freeze, though I expect any insulated freezing device would. It absolutely does make exactly what they show in the pictures, though, which many purported clear ice creators do not. https://a.co/d/bWpCqyB

I have the Ice Made Clear and it works good. You need to find the timing where all of your cubes on top are solid but before the whole thing freezes solid which makes one of the cubes taller. For me in my basement freezer that’s about 19 hours, I make them and freeze them in ziplocs so they’re good to go. https://icemadeclear.com

I have softened water and it doesn’t work, also anything too purified like RO or distilled will not work. I fill 5 gal jugs from my work with municipal water and it works perfect every time.

We use softened water and it works fine, what happens when you use softened water?

Super cloudy. I am on a well with extremely hard water and a tons of iron though. Since softeners operate by ionic exchange it kinda makes sense that results may differ. The harder the water is to begin with the more sodium you’ll end up with in the softened product.

If you’re making llb, I find that a bit of salt gets it very close to the bottled angostura version you can find in Trinidad and Tobago

Sweeten with a lemon-zest-infused syrup if you really wanna pack the flavor in there and use up more lemons.

Sir Lemming posted:I just wasn't clear on what we were steeping Sorry, the zest. Peel with a vegetable peeler to have as little of the white, bitter pith as possible, and let those sit covered in neutral spirit. The higher the proof the quicker the extraction, 100 proof vodka is a pretty sweet spot if you're not used to working with everclear or its like. Infuse like this until the liquor is fragrant, then add sugar syrup to tamp down the heat/to taste.

At a cousin’s wedding and I asked for a Tom Collins hoping that would be simple enough and not only did they not have simple syrup but the bartender said no one had ever asked her to make one before

Yeah, I have found that there really is no bar low enough for a wedding/airport/casino bar. The type of institutional knowledge that exists at a proper bar or is accrued by an invested hobbyist just doesn’t exist as general familiarity. Most people don’t (care to) know how to order a cocktail, so why bother knowing how to make one if you aren’t personally interested?

I learned a lot about making cocktails at home during the pandemic, but then when people were able to have weddings again and I tried the open bar, I felt like my innocence had been lost. It was honestly harder to figure out how to order something generic enough for them to make.

If the bartender is clearly not a bartender I go with a neat pour, Hendricks and soda (I don't like tonic), or Jack & diet. Any actual cocktails they have will be sugar bomb premix or just plain poo poo. I learned my lesson when I ordered a Bulliet Rye Manhattan at an Applebee's (I could see the bottle on the shelf) and the bartender looked at me like I had 3 heads.
