Capitalist Pig TOWN-aligned Homemade Pizza has been executed Day 3.

It is now Night 3.

My recipe is homemade pizza
Unfortunately, I did not think of doing this as my recipe until i had already made the dough, let it rise, and rolled it out onto the pan and had all the toppings prepped so i don't have many pictures.
However, this is the recipe i always use for pizza crust and it always comes out great (I ignore the cooking times for it and just use the actual dough part of it.)
Recipe
So, as i said, i prepared the dough using above recipe and already had it rolled out and in the pan before i thought of using this and taking a picture

I heavily oiled the pan with olive oil and stretched the dough and pressed it to fit
I have banana peppers, mozzarella, freshly grated parm, mushrooms, onions, black olives, and sliced salami (boars head brand).

I just used store bought jarred pizza sauce and after saucing the pizza i layered both bags of mozzarella on, then put the toppings, then topped it all off with the grated parm.

placed the pizza in a 400 f preheated oven and let it cook for 26 minutes.


Result was good.

A challenge to combine different textures? I have just the recipe for it!

A soft-boiled egg with toasted bread from Jane Austen's Emma



And when I say I have the recipe for it, I mean it literally.

You bring a pot of water to boil. Take your eggs, making sure you leave an even number of eggs in the fridge, and pierce them at both ends. Carefully lower them into the boiling water. The recipe says to boil them for three minutes, but that's to glibbery for me, so I go with four and a half minutes, the proper German egg boiling time according to Loriot.



Shock the egg with cold water and with a swift knife strike, behead it in a photogenic manner. Add a bit of toasted bread for crunchiness and to soak up the liquid egg yolk. A delicious meal, suitable even for people with a large amount of imaginary illnesses.

Homemade empanadillas mini-calzone

Improvisation meal! So I did pulled pork at roughly the same time Illu did. The pulled pork isn't relevant here. What is relevant is this thing:



I used the beef broth I did for the soup challenge, beef and all. Once the pork cooked, the concentrated sauce had a lot of this finely minced beef that had been in the broth, absorbing spice and concentrated taste for around two hours. I didn't want it in the pork, so I strained it away. It's not much, couple spoonfuls, but drat if it wasn't tasty (though slightly salty).

Improvisation time. Once it had cooled a bit, grabbed some empanada pizza base I had laying around, some pineapple and grated lactose-free cheese. Could have added peppers and onions for a more authentic empanada, but picky eaters and I wanted to do a single meal for everyone. If not having completely random beef goop on hand, frying some minced meat on a pan with veggies is the traditional Empanada recipe (Argentinian, Spanish use the term for something different).



Didn't snap a pic apparently, but the pineapple was cut onto small bite-sized chunks and roasted on a pan without oil, then let cool. This is so it doesn't make the dough all wet. Works the same for pizza.

The square dough was cut into circles by using a bowl and pressing. Remaining dough was re-kneaded with a rolling pin and also cut, we're not throwing poo poo away today.




Fillin' time! A scoop of beef, a scoop of pineapple, top with cheese. Close carefully by pinching the edge up. They'll open anyway.



Poke holes with a fork on top, beat an egg and paint them up so they get all golden. Stick on oven at 180C for as long as it takes for them to cook a bit.



The result.



Veredict: tasty as all gently caress, pineapple and cheese did a lot to offset the salty meat so it wasn't unpleasant at all. Would do them again, except I am sure this is never happening again in the same way. Once in a lifetime meal, yay!

PS. Not sure how easy is it to source it outside, but empanada dough can be done by hand pretty easily, it's very similar to pizza dough, only a bit wetter and spread way thinner. In this case I did have a spare store-bought one that was getting dry, so I used that.

I made Pmuzz's cookies. Let me tell you about some of the changed I had to make:

-First I halved the recipe like others did. I already have most (well some) of a lemon cake still here, so I don't need a ton more desserts for the moment.
-I used vegan buttery spread as a butter substitute. I'm lactose intolerant, so I try to make things dairy free when I can. I would normally not bring this up, but for cookies in particular, VBS is more watery than butter, and it makes cookies spread out when baking. It's a bit annoying here.
-I didn't have any earl grey tea, so I used red rooibos tea. This I felt was the best option of what I had but this made me very nervous about change in flavor profile.
-I didn't have quick oats, but I did have old-fashion oats, so I put those in the food processor, and I think that worked out ok.

And here they are. Despite all of the changes this come out great. Very tasty. I think I would add some fine cut pecans to this when I do it again. A+ love it.

Yum. It gets a generous dose of the spices from the recipe, along with crushed tomatoes.



The final result, combining the two:



Pork and beans bread, of a sort, and goulash. Or at least goul-ish.

Pork and beans in bread

Made pulled pork for the first time! Spices (garlic powder, rosemary, chipotle, cumin, smoked paprika, oregano) and sugar went into bowl with a drip of beer.



All mixed up!



This then went on bag with a piece of pork head, and into fridge for 24h.



Meat was then seared on all sides on a pressure cooker, before being put to cook for one hour with all the brine and a heap of beef broth from earlier.



It cooked really well! Crumbled up even when I was taking it out. Did a reduction of the sauce (got all the beef out for the empanadas) and poured it on top, too. Reserved.



Arepa time! Those are pretty loving easy to do, very tasty and a staple of Venezuelan and Colombian cuisine, filled with various stuff. You need precooked corn flour, usually labelled as "for arepas" anyway, some water, a pinch of salt, and to make a paste that's just slightly too sticky, it'll drink the excess water up. Let rest for 5-10 minutes, make a ball. If ball too small, add more flour and water. If it cracks, add more water.



Smash that ball onto a plain shape. You don't want it to be too thick, but it's a matter of taste. This one is small, because dinnertime.



Put into enough oil to cover it halfway, fry it up, swap sides so it cooks evenly. When it's looking crunchy, take out, and let it cool a bit so it will not crumble when you open it up.



Cut it halfway just shy of the whole way, fill up with pork and beans (or whatever else you have on hand, cheese arepas are delicious!). Eat.



Veredict: arepas are always good. Pulled pork is surprisingly tasty and way less effort than expected, looking forward to using it!

The mix of chewy and crunchy is good, the flavors are pretty complimentary (the chili lime gets trampled by whatever flavor "manwich" is)

I really need to find a copycat blend of takis seasoning, the poo poo is so good

Here is pork beans and bread...well at least something that has all three.



So I have some roasted pork from the weekend. I also have some bean/cucumber salad for the beans. I have bread. And for a sauce substitution I'm going to use some mole sauce that I'm just going to skim from a future meal of chicken mole. Let's see how this goes.



Here it is! I'm going to have this for my lunch tomorrow, so I'll post a trip report then. It is making me nervous.

Yeah it's a weird brand name sauce for "sloppy joes" / loose meat sandwiches - it's basically just ground beef and tomato sauce with seasoning

I did a sushi night! There was miso too but apparently I didn't take pictures of it. I did the strain the miso through a seive thing instead of just dolloping it into the water which made a difference I didn't even know I was missing.

Token Female's Stuffed shells with spinach and sausage is worth 30 points.

Ingredients:
10 oz mild or hot sausage (I generally use chicken, but sometime beef)
16 oz pasta shells
1 package (9-10 oz) thawed frozen chopped spinach. You can cook cook and chop the spinach yourself if you have the time
1 and 3/4 cup (15 oz) ricotta cheese
1 and 1/2 cup grated Parmesan cheese
1/2 tsp nutmeg
dash of salt idk maybe somewhere between 1/4 and 1/2 tsp.
4 large eggs
1 quart of tomato sauce

Directions:
discard sausage casings/wrappers. In a frying pan over med/high heat stir and crumble sausage for 5-10 stop when lightly browned. Discard any fat. Cool for at least 10 minutes.

Prepare pasta shells

Mix together sausage, spinach, the cheese, and nutmeg. In a separate bowl beat the eggs with the salt and then fold them into the sausage/cheese/spinach mixture.

Spoon 1 cup of the tomato sauce into the baking dishes

WIth a spoon, fill shells equally with sausage/cheese/egg/spinach mixture. Arragnge in a single layer in the sauce. drizzle 1/2 cup water over the pasta and then spoon remaining sauce evenly over the shells.

Bake covered at 375 until steaming in the center (40-55 minutes depending on how densely packed the shells are)
