Whats the trick to getting not losing all the brown crust on the pan when you cook a smash burger? I ended up scraping it off and putting it on my mostly grey burger

Ah I was using stainless steel since the cast iron isn't big enough. I'll just use oil next time

Sharp edged spatula or even bench scraper helps a lot. A plastic spatula is basically useless. Nothing wrong with stainless imo but cast iron will probably be easier. (It's not magic though, if I'm not careful I end up tearing off some of the crust on my smashed burgs even on a well seasoned cast iron skillet).

Saturday lunchtime burg The patties were oak smoked cheddar beef which coulda done with some extra over the top.. not complaining though e: it compressed down well, one handed burg!
