big fan of chiles relleno, always surprised me how little-known they seemed to be every time i was outside of the gulf coast/general southern area. more importantly re: chili secret ingredient- i always liked adding a generous portion of good dark chocolate, and next time i'm tempted to try half of that and some coffee

when i lived in new mexico i was spoiled for choice when it came to the superior chiles (red or green). now i dont live there and i have to make do with the most mundane choice at costco only (505 brand) i feel like the schnook eating egg noodles and ketchup
