Louisiana and Buffalo style hot sauces are basically Spicy Water in terms of texture. Sauces like Valentina and Tapatio are less runny, but not a culinary gel like ketchup and most mustards. Agree that Valentina black label is pretty good. You don't need to smother your food in it if you want spicy. Just a few dabs here and there. It's also like the cheapest hot sauce ever, cheaper than store brand.
