Free-range, grass fed, hormone free, 100% organic beef is worth a lot to some people. But gathering many good young beef cows at one time is going to be difficult, given that they are spread out all over hundreds of square miles of arid land it is probably a bunch of lovely little herds each with their own grumpy old bull. Apparently he spends more time chasing off supposed federal agents than doing anything that qualifies as animal husbandry. Bronze age herdsmen took more care of their stock.
