best part of a burger IMHO is the patty of ground beef
agreed, and for the first time, here today, in the lurkers thread of byob, i wil lreveal part, but not all, of my special nate burger spice and sauce mix.
- one pound medium ground beef
- two eggs
- crushed up goldfish crackers
- some breadcrumbs
- some grated onion
this makes your basic patties, but its just not enough so here is what were gonna do, in a separate bowl were gonna mix
- salt
- pepper
- seasoning salt
- chili powder
- a secret ingredient that is important and major
- one other secret ingredient
well now we have added all those dry ingredients, its looking mighty dry, and that aint right for burgs, no sir, so lets add some wet ingredients
- ketchup
- mustard
- soy sauce
- srircha
now that we got all this stuff mixed together, make it into four equal sized balls, take about half off of each of them, make a little patty with an indent in it, put some bacon and cheese in that bitch, put the other half the meat on top and reattach all the beef together, throw that on the bbq, the grill or a frying pan in the bacon grease from earlier if you feelin extra sassy, and you got some drat fine burgers

so as everyone knows im sure i decided i want to become a chef, well, i hate mushrooms, i hate eggs and i am just not a fan of fish, so over the next couple months i am going to train my taste buds to like all of these things, starting tonight with a stir fry i am making in which i will be adding some mushrooms
The thing about mushrooms people don't get is that they can absorb an insane amount of flavor. A good beginner's trick to mushrooms is to sautee them in the juice of a meat you've cooked. Maybe splash a little wine and then flour to thicken it, but you will get crazy flavor from it. Don't drown the fish in sauce or flavor, fish needs just a little bit of zip. I prefer either smokey or sweet flavors with my fish, and I recommend starting with a thicker, meatier fish, like swordfish if you can get it.
