Been occasionally making whiskey flips with our fresh eggs recently: just 50g whiskey, 20g simple syrup, 1 raw egg, and bitters. first shake without ice to mix and build foam, then add ice and shake again, then strain. One of my new favorite ways to consume egg.

I can’t sleep I’m thinking of getting up and making Eggs Benedict, but I only have ham and bacon not back bacon or spinach. Learning how to make stick blender Hollandaise isn’t great for weight loss. Or maintenance. So maybe if I just think about Eggs Benedict and post about Eggs Benedict I won’t get up and make it.
