I thought that if a defender touched the ball and it went out of bounds in the end zone it was a touchback? Or is that only if it goes out the back of the end zone?

If the ball goes out of bounds after a fumble, it goes to the team that last possessed it. If it goes out of bounds in the end zone, it's a touchback. Thus a couple inches made all the difference as to who got the ball.

I'm only looking at the gif but I don't know if I buy that Thomas swatted it. He has his right hand on the runners arm all the way through. The white glove touching the ball last is the runner's, and he looks like he's just trying to grab the ball.

Thomas's arm is inside of the runner's arm and he definitely came back to smack it, there's no way the runner's arm can get to that final position unless Thomas's moves back to the ball.

If the defender deliberately bats the ball while it's in the field and sends it out through his own end zone, that's a safety.

There is an illegal batting penalty but it looks like you have to bat the ball forward for your team unless it's already in the end zone, so even if it's the better play to bat it backwards for a touchback it wouldn't be a penalty. From here assuming it's still current:

Take a look at this video at the 8:45 mark.The angle is really good. It looks like the bat out of bounds is incidental.
