Bounty Hunter is a great predecessor to Shadows of the Empire. It’s a good GCN third-person action game.

I was really good at Jedi Outcast multiplayer. Specifically patch 1.03 which had the hosed up one-hit kill back swing move. I'll never be as good at another game as I was when I could abuse that move. Once they nerfed it I got bored and stopped playing I introduced that game to a computer camp I worked at, mostly so I could be better than everyone else. They still play the game over 15 years later. My legacy lives on. So yeah that one's my favorite. Rogue Squadron for Gamecube was also really pretty so I liked that too.
