It's not something you eat regularly, so it doesn't really matter. I get brains once or twice a year when family friends slaughter a pig, so the excess cholesterol is negligible in the long term.

Lamb brains used to be cheap as chips where I grew up, and mum would make them into fritters for us. But then they became some kind of delicacy and were more expensive than the meat so we stopped. She misses them, I don't.
