It's not like French fries, lol. It's boiled sweet dough where the potato replaces some of the wheat flour. The same recipe can be made without potatoes with a dough made with only flour, but it has a different texture.

For starters the potato dough itself is also sweet, as well as buttery which blends with the breadcrumb topping. I like to cut a potato in 4 equal slices lengthwise, discard the two skin covered sides like you do a loaf of bread, and then use the two inner slices as bread. Potato bread is simple and delicious.

I remember making gnocchi when I was a novice cook of a student and they turned out great. Now with an additional 15 years experience under my belt the last two times I've tried to make them they've fallen apart when boiling, apart from the sweet potato ones which I guess we're more fibrous thus held their form better. No idea what I'm doing wrong, although the recipes ige latterly followed have only had a small percentage of flour to bind them (as is more traditional) so maybe that's the problem.
