I always chuckle at this since the spice packet is probably better just because it hasn’t been sitting in a cabinet for 3 years like I’m sure those jars have. It’s all those things listed, but pre-measured and manufactured within the last calendar year

Yeah, it's pretty easy to keep up on spices if you cook regularly, and I'm convinced those packets lose their flavor/absorb other flavor faster than the bottled ones.

Anything McCormick is going to have sat in the supply chain for longer than a real deal chef is going to tolerate and the bottles are better than a foil packet if you are a packaging hippy but still pretty bad compared to reusable jars and packets. But you know what I'm just glad you're cooking with spices.

If you're serious about fresh spices online sources like Penzeys are well-regarded. Also if your area has any stores that serve a specific immigrant population (Mexican groceries or Asian supermarkets or something like that) they often have fresher/more high quality spices than a big chain like Safeway or Kroger.

But honestly I wouldn't stress about it if you're mostly happy with your cooking. 90% of home cooking doesn't need the freshest ingredients. I have jars of McCormick for everyday meals, and use fresher spices for special, nicer meals.

Chili powder is just dehydrated, ground chili peppers. Some chili powders are a blend of peppers, but you can also find specific chili powders (like ancho or guajillo powders). You can also grind your whole dried chilis fresh. Garam masala just refers to an overall practice of blending a certain mix of spices. It can be distributed as a pre-ground, packaged spice blend, but it's also common to roast and grind the spices fresh as you're making the dish.
