Pissflaps posted:i saw some abattoir butchers doing their thing and i saw the massive joints of meat they cut through with their knives and i was wondering what sort of knives they use? nah, the abbatoir buys the knives so they never spend stupid amounts. unless you're cutting 50 grand pieces of tuna to micro millimeter precision you don't need anything that expensive, and i'd be surprised if they weren't just using victorinox knives (http://www.scobiesdirect.com/KnifeChart.asp boning knives on here). they will almost certainly use a whetstone or grinder as well as a steel though. leather is actually the best thing to use but gently caress me it takes forever. or you can use one of those anysharp knife sharpeners which cost about a tenner but put a razor thin blade on any knife
