My dad just started making this fermented/pickled stuff that’s like sauerkraut but with shredded carrots and maybe onions in it, and I can’t remember what it’s called but the name sounds like “gordita” (like the Taco Bell food) but with an ‘o’ at the end of it instead of an ‘a’.

He started making it at my aunt’s insistence after she told him it was “great for your gut [and] full of good gut bacteria” and sent him a huge ceramic fermenting... pot... thing with a bunch of wooden tools and poo poo.

...... it doesn’t taste that bad? I just don’t get what it is with old people and gut health. :shrug:

Also what the gently caress is this stuff called?

yes i trust the pickled food opinion of someone who didn't know ginger existed in a nonpickled form until this week

lots of good sweeter pickles out there. relish is good, chowchow is good. lots of non north american sweeter pickles out there. not everything is koolaid pickles

Sweet pickles work fine when you're pickling something that has any sweetness whatsoever to it to start with. Like sweet potatoes or squashes or carrots and certainly fruits and so on are all good pickled relatively sweet.

I don’t mind room temp fried chicken but cold fried chicken is always more disappointing than I want it to be because the skin has usually gotten pretty soft by that point.

In regards sweet pickles, I think all the major supermarket brands are pretty sweet and gross, but there are excellent diy or craft varieties. I like them on sandwiches or in place of relish.

Commercially packed bread and butters are almost always too sweet, but homemade bread and butters are approximately the best thing to have on the side with smoked brisket.

Eh. I've never been crazy about jalapeños in general. They're like a third-tier pepper at best.

But anyway pickled jalapeños don't serve the same role anyway. Smoked brisket with rub and no sauce on like challah is hot-spicy and salty and b&b pickles are a little sweet and super crisp and refreshing. It's sorta like having corn on the cob or elote on the side. It's there for the contrast, which pickled jalapeños don't (in this context) have.

Nah, just your opinion is.

Honestly most pickled jalapeños I find are really bad, in part because people don’t do a good job pickling them, so they end up being mush, and in part because jalapeños tend to be highly variable in terms of heat distribution. But good pickled jalapeños tend to be pretty great.

Also 2 or 3 day fridge pickled jalapenos are awesome because they're the best of both worlds.

Ghost pepper tartar sauce is delicious and amazing over some breaded fish.

Just uh, don't have any plans besides writhing in pain for the next while.
