I still want to give making processed chease at home with sodium citrate. That way I could get real thick slices of perfectly melty cheese in whatever blend I want.

It seems like a good combination of sweet and savory Yeah it caught fire on the grill gonna make a hellburg tonight by mixing lean beef w/ some bacon fat, then processing some dillz, roasted garlic cloves, onion and a buncha loving jalapenos into a meat slurry that forms the powerburgs. Its amazing the more slurried vegetables you add the better a burger gets but dont take my word for it just try it

I tried the one that Kenji did on serious eats a while ago because I had everything in the kitchen and it was raining real hard all day. It works pretty good but if I ever bothered to do it again I'd make a lot less otherwise you've got like thirty slices of cheese and most of it went bad before I got around to using it. If forum traffic is your only metric for how good threads are, I'd be happy to send this over to BYOB(urger) and wash my hands of it. Seems like it would be kind of a waste, though. BYOB won't teach you about pea butter, or how frying in lard makes the best fries, or how to get the best grill marks, or just how important a really good bun is to proper burger enjoyment. It seems like the fast food mindset: quantity and speed over quality.
