Dropping a bird in oil is method#1 Lowering in a wet or frozen bird: #2 Doing everything right at the outset, then leaving to watch the Lions: no. I've been frying turkeys at Thanksgiving for the past 12-years or so. The temperature has to be regulated. The fryer can never be left unattended. The gas bottle is right next to me, along with a bath towel in a bucket of water. It takes 3-4 minutes to lower a properly prepped turkey into a fryer. I've never come close to having an incident; it does, however, require the same vigilance as driving on ice. The 45-minutes it takes to fry a bird seems to take forever. Worth it, though.

Very tender and moist. My BiL used to do it every Thanksgiving. The downside is that it takes a poo poo ton of oil that you don't want to just throw out, so he'd store it the freezer for a year. That got tiresome.

Continuing the turkey talk, I've never had deep fried, but dry-brined and spatchcocked has stepped up my turkey game considerably. It's hard to fathom turkey that's easier and tastier than that.

Sorry about the herky-jerky; it's hard to focus on photography when doing these things. https://www.youtube.com/watch?v=ZQRwmA1IZ3s This was the second bird I'd done that day; the first was 20-lbs, which is the upper limit for what this rig can handle, not least becase once in, the oil is really close to the top. A twelve-pounder uses a lot less oil so the extra space catches the boil (which is the thing most novices don't expect - that boil is right below flash, has a lot of air in it, and if it gets over the side in any substantial amount, it's katie-bar-the-door). As you can see, the 12-lb bird goes in with little drama. FYI that flapping wire is the lead for a thermometer probe in the thigh meat. I check the breast with a regular meat thermometer, and the oil gets its own.

One of my exes is from rural Western Kentucky and every year whatever tiny town she lived near would have a big, pre-Thanksgiving turkey fry using converted washing machines to use as deep fryers. My main regret in that relationship was never getting to see this fabled turkey fry festival.
