It's about the fumes.

Dropping a lit cigarette into a puddle of gas won't be harmful, but having an ignition source near gas fumes will.

I knew a dude who would start filling up his truck, lock the pump on, the get in the fuckin cab and start smoking while ashing out the window where the wind took it directly to the gas cap

Incidentally dropping a frozen turkey into a deep fryer and making the rookies put it out is a popular outreach event for fire houses during the holidays.

I've had a few claims with them. No kidding.

Dropping a bird in oil is method#1
Lowering in a wet or frozen bird: #2
Doing everything right at the outset, then leaving to watch the Lions: no.

I've been frying turkeys at Thanksgiving for the past 12-years or so.

The temperature has to be regulated. The fryer can never be left unattended. The gas bottle is right next to me, along with a bath towel in a bucket of water.

It takes 3-4 minutes to lower a properly prepped turkey into a fryer.

I've never come close to having an incident; it does, however, require the same vigilance as driving on ice. The 45-minutes it takes to fry a bird seems to take forever. Worth it, though.

This is all new to me.

Why not quarter the bird and fry the parts separately, like kfc?

I thought those youtube videos of people deep frying turkeys were jokes - like people who stick fireworks in their butt cracks on the 4th July.

It honestly never crossed my mind that it was a real thing.

I am intrigued.

That's actually the sensible thing to do - at least pulling the leg quarters - because the legs/thighs, shockingly, do take longer to cook.

But Thanksgiving.

Which is illogical anyway because the bird is thoroughly skeletonized five minutes after I put it on the table.

Deep-fried turkey is delicious. Very tender and moist.

My BiL used to do it every Thanksgiving. The downside is that it takes a poo poo ton of oil that you don't want to just throw out, so he'd store it the freezer for a year. That got tiresome.

It's really good and produces a great turkey with remarkably little time and effort, assuming that you don't decide to wing it and inadvertently create a turkeybomb, certainly compared with the difficulties in making one the traditional way.

Continuing the turkey talk, I've never had deep fried, but dry-brined and spatchcocked has stepped up my turkey game considerably. It's hard to fathom turkey that's easier and tastier than that.

Here's a rough video I shot in 2014 of a 12-lb turkey. Sorry about the herky-jerky; it's hard to focus on photography when doing these things.

https://www.youtube.com/watch?v=ZQRwmA1IZ3s

This was the second bird I'd done that day; the first was 20-lbs, which is the upper limit for what this rig can handle, not least becase once in, the oil is really close to the top. A twelve-pounder uses a lot less oil so the extra space catches the boil (which is the thing most novices don't expect - that boil is right below flash, has a lot of air in it, and if it gets over the side in any substantial amount, it's katie-bar-the-door). As you can see, the 12-lb bird goes in with little drama.

FYI that flapping wire is the lead for a thermometer probe in the thigh meat. I check the breast with a regular meat thermometer, and the oil gets its own.

Another good thing about a turkey fryer is that you can repurpose the setup as a lobster steamer.

One of my exes is from rural Western Kentucky and every year whatever tiny town she lived near would have a big, pre-Thanksgiving turkey fry using converted washing machines to use as deep fryers.

My main regret in that relationship was never getting to see this fabled turkey fry festival.
