Phantom power doesn't really affect dynamic mics. It's ribbon mics you need to keep separate from phantom power.

I personally like to record in stereo with the mics on the opposite sides of the room and then crank the guitar amp to 11.

You're better off replacing either the mixing console or the laptop, because there's no easy way to get either of them to talk to each other.

If you were able to develop a firewire->USB data translation device, you'd be a rich man, assuming you are also able to overcome the product licensing nightmare that you'd be facing.

Try it with the mic slightly behind the piano (maybe a foot or two) pointed at the the center of the back plate. You don't want to go too far out in the room unless you want the more airy sound.
