Anyone recommend any indie or rock bands that use a lot of world music influences? Especially indian or middle eastern stuff.

Secret Chiefs 3. Check out their album "Book of Horizons" Can't go wrong with any of their albums really, though the debut, First Grand Constitution and Bylaws has some useless tape manipulation and other dickery in it.

I'm looking for some new bands not so much exclusively based on their sound but on their versatility and influences...

For versatility and multiple influences, Ween is king. If you prefer harder rock / punk I recommend their first album, "GodWeenSatan: The Oneness" for more punk based songs (but still plenty of diversity) and "Chocolate and Cheese" or "The Mollusk" for rock / pop with all the influences you could ever think of: Mexican showdown bravado, Philly soul, lounge, Wings-type smooth pop, folk, waltzes, new wave, etc. And when you think they can't do anything else, they did a whole country album which has to be heard to be believed.
