I actually should have mentioned that I own both an SV650 and a DRZ, and I like them both, but the DRZ definitely beats the poo poo out of the SV in the city, which is where I do most of my riding.

Not exactly related, but I'm 6'1", and I can bend my knees on the DRZ once I actually sit down. It squats quite a bit. I had the SV/DRZ combo until the SV was wrecked. I haven't commuted to work on the DRZ, but it's like 95% city, so I imagine it'll be more enjoyable than the SV was. I'm still trying to figure out what to replace the SV and my wants are all over the place.

You might actually find a KLR650 or DR650 a better choice if you're not doing much more than light offroading. It's way more comfortable, and you can find good, used examples under $2000 without much effort. You can't really supermoto them (well, you probably could, but it's not the best choice), but you can go on a highway without quite the vibrations.

I was walking home from the Metro last night and saw a guy riding an SMC of some displacement (didn't get a good look) stopped at a light. I was disappointed when he took off with both wheels on the ground.

Er. The handlebar may have been bent. Oh, and it could have punctured the case, but that would have been obvious. Dropping a DRZ doesn't really hurt it other than cosmetically and barely even that. I guess the tank could get dented, maybe?

Yes. Do it. Swapping between sets is easy. Half hour at most. Or so I'm told, anyway. Utility may be an issue if that includes carrying more than you can fit in a backpack, but other than that, it sounds like exactly what you want.

Speaking of jets, where can I get them for the FCR? The TT kit comes with a bigger main jet than I'll need since I have a stock exhaust right now. Searching the TT store only brings up full jet kits, and I don't need anything but the main.

Not very. They have to come out to adjust valves, so it's required for maintenance, anyway. Just triple check everything before you put it back together.

DRZs pop up around DC on occasion. The bike market here is mostly affluent lawyers and IT professionals, so they're not as common as other things. I've only ever seen one or two supermotos on the road besides mine.
