When I first started using Lightroom, I tried using the 5 star rating system just to rate photos, but I got tired of trying to figure out if photos were a 3 or a 4. I then started this system:

Flag: Shots I like and want to process.
Reject: Out of focus, people walking into the frame.

After processing, 5-star favourites.

I pretty much take full size RAWs. I always end up exporting at 1024-long-edge. Flash memory isn't that expensive anyways. You'll never regret taking a picture that's too high-res, but you will probably regret taking a picture that's too low-res one day.
